You can add additional NAT configurations in for scenarios in VMware Fusion Professional which a virtual machine shares the IP address and MAC address of macOS, turning off the DHCP service or using a subnet IP or subnet mask other than the default. VMware explains the automatic MAC address generation process as follows: VMware Fusion provides one Share with my Mac configuration that uses NAT by default.
